Here, we will not talk about the maturity of seeds or stems, because ripe or not, you never would drink the juice coming from them. Instead, we focus on the fruity character expressed by the berries when tasted several times a week until we are satisfied.
In addition to our homemade samples, laboratory analyses give us all the information that our palates cannot: sugar, acidity, polyphenols, minerals, natural nutrients, etc. We have all the elements necessary to make the most important decision of the year: the date of harvest. It will be different for each field, depending on the fruit’s ripeness and the style of wine we want. Grapes will then be handpicked (with good mood!) and carried to the cellar in 10kg cases.
