On the 8th of November we picked some overripe Alicante Bouschet grapes (an ancient Languedoc variety) which had a potential alcohol of about 25%! We pressed some of it in order to extract some juice (VERY little) and we let the rest macerating for a couple weeks…
On november 24th we dug out the grapes from the tank, pressed them, and extracted the precious nectar: An amazingly sweet and concentrated juice, with very intense flavors.
Now the juice is (very) slowly fermenting in big old “dame-jeannes” (glass bottles) and will keep doing so the whole winter!
