We pressed some of it in order to extract some juice (VERY little) and we let the rest macerating for a couple weeks\u2026<\/p>\n<p>On november 24th we dug out the grapes from the tank, pressed them, and extracted the precious nectar: An amazingly sweet and concentrated juice, with very intense flavors.<\/p>\n<p>Now the juice is (very) slowly fermenting in big old \u201cdame-jeannes\u201d (glass bottles) and will keep doing so the whole winter!<\/p>\n<p>Here the photoset on our Tumblr blog: http:\/\/domainedesamiel.tumblr.com\/<\/p>\n","protected":false},"excerpt":{"rendered":"<p>On the 8th of November we picked some overripe Alicante Bouschet grapes (an ancient Languedoc variety) which had a potential alcohol of about 25%!
