So we brought it a heater, a blanket, coffee and croissants!!!<\/em><\/p>\n<p>Plus s\u00e9rieusement, nous faisons sur cette cuve ce que l&#8217;on appelle une &#8220;mac\u00e9ration post-fermentaire&#8221;. Une fois tous les sucres transform\u00e9s en alcool, le vin est dit &#8220;sec&#8221;. Plut\u00f4t que de d\u00e9cuver imm\u00e9diatement, nous laissons quelques jours les raisins (le &#8220;marc&#8221;) en contact avec le vin, le tout \u00e0 une temp\u00e9rature d&#8217;environ 30\u00b0C, afin d&#8217;obtenir un vin plus gras, plus fondu, avec un plus grand potentiel de garde&#8230;<\/p>\n<p><em>More seriously, we are doing with this tank what we call a &#8220;post-fermentation maceration&#8221;. Once all the sugars are converted into alcohol, the wine is &#8220;dry&#8221;.
